204g Thyme water
6g salt
46 levain

30mins Autolyse
2 sets of lamination
4 sets of coli fold
Shape then rest in room temp 5 mins, in fridge for 14 hours
Tots 4.5 hours bulk time at room temp 26c

Thyme water:
Take a bunch of thyme sprigs and grind them lightly in a pestle and mortar. Cover with boiling water and let it sit for 24 hours.
Pour the water through a sieve.
